
Last night, my mother made a hearty pot of beef and veg soup. It was filling enough on its own but I decided to makes these chicken sliders as well.
Sliders are really just small burgers and what you put between the mini buns is entirely your choice.
For my filling, I decided on pan seared chicken, jalapeño mayonnaise, some salad (spinach, rosa tomatoes, red onions and gherkins) and cheese, for what is a burger without cheese?
It didn’t take long to put together and I only used two chicken breasts for all six sliders. The buns were bought (I don’t have time to make fresh rolls during the week because work of course), the mayo was from a jar as were the jalapeños. Convenience is what it’s all about during the week.
Here’s how I made it.
The chicken
What I used:
2 chicken breasts
Steak and chops spice (yes, you can use this for chicken)
Salt
Olive oil
Flour to dust over the chicken
How I made it:
Butterfly the breast, cut into 3 pieces each and rub with olive oil, spice and salt. Dust over some flour and sear in a hot pan on each side until chicken has cooked through.

The mayo
What I used:
3 tbsp mayonnaise
Chopped jalapeños (how much you use depends on how hot you like it)
How I made it:
Place mayo into a small bowl. Add chopped chillies and mix.
The sliders
What I used:
Mini burger buns
Cooked chicken breast (see above)
Jalapeño mayo (see above)
Baby spinach leaves
Sliced gherkins
Sliced rosa tomatoes
Sliced red onion
Grated cheese (any cheese of your choosing – gorgonzola is a favourite of mine)
How I made it:
Slice open the buns. On the bottom, place cheese. ON top of that place the warm chicken – this should allow the cheese to melt. Place the onion and tomatoes on top of the chicken. Top that with a couple of spinach leaves and finally spread mayo on the inside of the top bun so it sticks to the spinach.

* Note: You can serve these with a side of fries or onion rings or as part of your menu for a cocktail supper. Eat it on its own too. Be creative. Have fun.
