I love soup. It’s one of the best things about winter. What could be simpler than boiling and then blending up your cooking veggies to create a hot, hearty, healthy meal? It’s super convenient to pack up too and just heat in the office microwave.
But it’s not winter right now, is it? In fact we’re smack bang in the heart of Cape Town’s summer heat. It didn’t stop my soup craving though so thank goodness the Spaniards came up with gazpacho. It’s even quicker to prepare than a winter soup because it requires no cooking whatsoever. Just chopping and blending.
I was inspired a few days ago after watching Gordon Ramsay’s Ultimate Home Cooking. He made gazpacho as part of an episode about healthy meals.
For mine, I used about half the ingredients he did and added (possibly a bit too much) red chillies – hence the muy caliente in the title.
Gazpacho
What I used:
3 ripe tomatoes, diced
Half a cucumber, peeled and diced.
Half a red pepper, deseeded and diced
Half a green pepper, deseeded and diced
2 cloves of garlic
3 spring onions, roughly chopped
2 hot red chillies (leave out if you don’t like hot food or use one and deseed)
Handful of coriander
1 bread roll
2 tbsp avocado oil
1 tbsp olive oil
2 tbsp brown vinegar
Salt to taste
How I made it:
Combine all the above ingredients in a bowl and mix well. Cover and leave in fridge for an hour or overnight if you can. Then blitz up in a blender. Et voila. Your gazpacho is ready. Sexy simple summer soup. [God, I love alliteration]
Sounds great. What would you pair with it? Bread, like you would a soup?
You could pair with bread. Maybe warm toast to contrast the coldness of the soup. Yesterday I had it with provita biscuits and cheese. 🙂
