I’m thinking of doing a series of food posts under the title “Happy accident”. Many of my dishes happen that way. Like I’ve stated before, my kitchen store cupboard/fridge is often a giant mystery box and I make things up as I go along. If they work, they work. If they don’t, at least I’ve learned something from the experiment.
A couple of Fridays ago, I decide to make prawn pizza for supper. I remembered that I had some prawns in the freezer and was happily plotting how I would put this pizza together. When I got home, I discovered that I only had a measly 6 prawns left – a lot less than I thought I had, but enough for a dinner plate sized pizza.
There was a bag of crumbed calamari next to the prawns in the same drawer. Thought I’d fry it as a little starter before the pizza was served and that’s when I saw the few mini pizza bases (they were ready-made; I make my own too but pre-bought bases are a time-saver in this busy day and age) that were also in the freezer. But my earlier dilemma meant that I would not have enough prawns to top these babies. And that’s when I decided to use the crumbed calamari as its topping.
I had baby spinach in the fridge, which I added as well.
The following week, we had a family night and I decided to make these again as one of the savoury elements on offer and they were quite a hit.
Here’s how I put it together.
What I used:
Ready-made pizza bases
Sweet chilli sauce
Baby spinach
Fried, crumbed calamari
Mozzarella cheese
How I made it:
Brush bases with chilli sauce. Top with baby spinach and top that with the calamari. Add cheese and pop into the oven until cheese melts. Enjoy!
